Mononoke (no Princess). That might have something to do with my love of the Medicine Seller, though. However, I like the puzzling stories and I think they pulled off the paper-cutout-like-coloring better than Gankutsuou.

It's hard for me to choose, there's just too many varieties... But Casshern SINS is definitely one of the most unique I've ever seen.
FLCL and Dead Leaves of course, (BTW, props to Bokurano for even knowing of that amazing movie, =D)...
And I also love the animation in Kanokon...

FLCL, does have some of the best animation i think, its really fluid for the most part, hell, they did the whole manga panel scene in 2 different episodes (FLCL was the start of my anime collection) I thought black cat was pretty good tooo *shrugs*

Golden Boy has some fairly good animation for its age. The boobs in that show make me laugh. But yeah, good stuff from Gainax and KyoAni are awesome, too.

The old Gigantor cartoon from the 60's, it may not be the most advanced or fluid animation, but boy do I love watching it.
